All you have to do is drift on all the turns.
And on that first race we did, I hit a random speed boost (lines formed in front of my kart and I sped up without an item) and knocked myself and Daisy off xD
Damn random speed boosts come at the worst times!

it might be easy but I still fall off a lot.
You should stick with Mushroom tires for awhile until you get used to drifting corners, it has great handling/acc with some decent speed to keep up.
Once you master that move on to Monster tires/Slick tires to get used to sharper turning as these wheels hold more speed but lose handling/acc.
