I'm super excited for this game, but I'm a bit concerned about having FF titles I haven't played spoiled for me. I never finished 8 and 10, and never touched 9, but they are all games I very much want to do one day. Will my life be ruined playing these bits in Theatrhythm or am I mostly safe? General plot points I don't exactly care about, but major twists and endings are what I'm thinking.

Without the dialogue and context most of the scenes don't really tell you much. There's a mid-game spoiler for 10 that might bother you a bit, and 7 has one of its biggest twists obviously spoiled (but I presume you know that one already).
Nothing big for 8 or 9, as far as I remember.

Well, Event Music Stages show cutscenes/important battles in the background for the entire length of the song. If you don't pay attention to the cutscenes you might not be spoiled at all, but the cutscenes are kinda distracting. As you won't know when each scene goes in the story you shouldn't have the games ruined for you, but if you're the kind of person who wants absolutely everything to be a surprise you might not want to play the EMS songs more than you have to.

Except... the extended scene for 9 shows about half of the ending cinematic. However, out of context it doesn't really mean much and is mostly forgettable.

Hell, I wasn't even sure if it was part of the ending or the opening half the time with the lack of proper context or music. I think 9 is perfectly safe, TBH. All of the big twists from the ending are left out, as far as I could tell.

Yeah, 7's EMS is the only realy spoiler Ive seen other than 13's ending kinda hinted at.
But if you havent played the game and know what's going on in the background or are too busy paying attention to the notes, you shouldnt be spoiled.
Now Enemies and those collectacards will spoil things.

I felt that the 13 ending spoiler was pretty big. If you have not STARTED FF13, you probably won't recognize the spoiler, but if you're half-way through it, and you know the characters, you will EASILY understand what's going on in the scene and IMO that is a huge spoiler.
I came just to post this just now, but searched for "spoiler" first lol... and found these topics.
But yeah, you will get spoiled the following things as far as I remember: (don't read these unless you've cleared the games because most of them are ending spoilers lol)
FF4 - You probably won't actually be spoiled because you need the dialogue to really explain these scenes, but the burning of Rydia's village, and Palom and Parom's sacrifice are shown fairly clearly. I think the ending part also says something about Cecil and Golbez being brothers.
FF7 - Aerith dies. While you don't see the infamous stabby scene, you see Cloud lay her body to rest in the water.
FF10 - Tidus and Yuna get together, Yuna marries and kisses Seymour, Tidus and Yuna have to part. This EMS makes me cry lol.
FF13 - Serah and Sazh's kid (for some reason his name escapes me right now) come back from their crystal state. IMO this is a huge spoiler since most of the game is spent wondering if it's even possible, and hinting that the main cast may actually just turn into crystals like them -_- It's hinted that EITHER way can happen, and you're mostly let to expect that everyone's going to just become a crystal in the end or die trying. Of course, if you know about FF13-2's existence at all, you know Serah is not a crystal later since she's the main character of the game lol.

If ever there was an appropriate time for the old "SPOILERS: Aeris dies" meme, this is it. And you do very clearly see her get stabbed. I know, I always mess up at that part because I'm too busy laughing at her getting stabbed. It's immediately before Cloud dumps her corpse in the river.
